Yup, even the littles will go crazy for these all-too-familiar egg roll flavors served up in a big bowl of veggies. I’ve served it to dozens of people of all ages. Ingredients:
- Olive Oil: 2 tablespoons
- Ground Turkey: 1 pound
- 1 small Onion
- Shredded Carrots: 1 cup
- Garlic: 3 Cloves
- Finely Minced Ginger: 1 teaspoon
- Chicken Broth: a quarter cup
- 1 small Shredded Head of Cabbage or 8 cups
- Soy Sauce or Tamari: 3 tablespoons
- Rice Vinegar: 1 tablespoon
- Salt: 3 quarters of a teaspoon
- Black Pepper: a half teaspoon
- toasted sesame oil: 1 teaspoon
Preperation:
- Heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add turkey cook for 5-6 minutes.
- Move turkey to side of the pan add onion and rest of olive oil cook for 3-4 minutes.
- Add shredded carrots, garlic, and ginger cook for 2 minutes stirring frequently.
- Pour in chicken broth and scrape brown bits from bottom of the pan.
- Add cabbage, tamari(or soysauce), vinegar, salt, and pepper stir well then cover.
- Reduce Heat to medium-low and cook for 12-15minutes or until cabbage has reached desired tenderness.
- Remove from heat add toasted sesame oil.
- Serve in a bowl over white rice,if you using that, and top with green onions, toasted sesame seeds, and sriracha mayo,if desired.
Cooking Tips:
- serves 4people
- fresh shredded cabbage is best but you could use 2bags or 8cups of coleslaw mix or preshredded cabbage
